Each of the #yegfood presenters were asked to provide a recipe. One they loved, that can easily include local items and should be shared with you. Please enjoy the following recipe, follow-up on this organization’s local food tools and eat local!

Rhubarb Lemonade 

 

Sustainable_Food_Edmonton Green Drinks Edmonton Local FoodThis recipe was served on our Community Garden Bike Tour last summer (courtesy of the Strathcona Rail Community Garden) and received rave reviews!

2 cups chopped rhubarb

3/4 cup water

3/4 cup sugar

2 tsps (or more) zest of lemon

3/4 cup fresh lemon juice

lemon slices for garnish

Bring rhubarb, water, sugar and zest to a boil, reduce to simmer for about 10 – 15 minutes or until rhubarb breaks up. Remove from heat and press through cheesecloth. Add lemon juice and cool. When ready to enjoy, use one cup rhubarb lemonade concentrate to two cups cold water and a few ice cubes. Garnish with lemon slices if desired. Keeps in airtight container for up to a week in fridge.
